Fresh Flavor Fast

I'm a huge fan of Martha's Great Food Fast, it's one of the few cookbooks in my kitchen with a completely broken spine, spills on nearly every page and earmarked pages so I don't forget where to find my favorite recipes. Let's just say it's in a similar condition to a well-loved children's book.

Recently, while buying a wedding shower gift, I came across Fresh Flavor Fast. Although I had no intention of buying anything for myself, I convinced myself that it was totally okay to break my "no shopping" rule for Martha.

Tonight, after a lot of deliberating, I decided to try a pork tenderloin recipe with apples and leeks.  The pork was  seasoned with olive oil, salt and pepper...which I was skeptical about.  However, the apples and leeks were really packed with flavor. I sauteed them with an ingredient I'd never worked with before - fennel seeds. Once the apples were soft, I tossed them with honey and red wine vinegar. The result was a side dish with exactly what Martha promised -- really fresh flavor! I enjoyed the fennel seeds a lot more than I thought, they definitely added a burst of flavor and complimented the leeks nicely.

Here's a look at what's left on my plate...yum!! I can't wait to try more of the recipes.
